1 cup lentils
1 large onion
1 large carrots
1 tbsp tomato puree
2 tsp cumin
1 tsp paprika
1/2 tsp mint
1/2 tsp thyme
1/4 tsp black pepper
1/4 tsp red pepper flakes
4 cups vegetable stock
1 cup water
1 pinch sea salt

Steps

Rinse the lentils and chop the onion and carrot.
Heat cooking oil in a large pot over medium heat, then cook the onion and carrot for 5 minutes.
Stir in the tomato puree, cumin, paprika, mint, thyme, black pepper, and red pepper flakes for 1 minute.
Add the lentils, vegetable stock, water, and salt, then bring the pot to a boil.
Cover and simmer for 30 minutes, stirring occasionally, until the lentils are tender.
