Ingredients

2 cups whole lentils
3 1/2 cups unsalted chicken stock
3 tbsp curry powder
1/2 tsp table salt
2 tbsp ghee
8 cloves garlic
1 onion
1 tbsp ginger
1 tbsp regular soy sauce
3/4 tsp cayenne pepper
1/4 cup tomato paste
3/8 cup coconut milk (optional)

Steps

Set the Instant Pot to sauté and melt the ghee for 2 minutes.
Cook the onion, garlic, and ginger for 4 minutes, stirring often.
Stir in the curry powder, cayenne, tomato paste, soy sauce, lentils, salt, and chicken stock.
Lock the lid and cook on high pressure for 15 minutes, then let the pressure release naturally for 10 minutes.
Release the remaining pressure, open the lid, and stir in the coconut milk if using.
Simmer on sauté for 3 minutes to thicken the curry.
