- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1 cup zucchini
- 1 egg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp kosher salt
- 2 cups powdered sugar
- 1/4 cup lemon juice
- 2 tsp butter
Steps
- Heat the oven to 350 F and grease two baking sheets with cooking oil.
- Beat the butter and sugar in a bowl, then mix in the zucchini, egg, lemon juice, and vanilla.
- Stir in the flour, oats, baking soda, cinnamon, and salt until a soft dough forms.
- Drop rounded spoonfuls onto the baking sheets and bake for 10 to 12 minutes, until the edges are set.
- Cool the cookies on the sheets for 5 minutes, then move them to a rack.
- Melt the 2 tablespoons butter and whisk it with powdered sugar and lemon juice, then drizzle the glaze over the cooled cookies.
