Ingredients
- 3 large eggs
- 1 cup milk
- 2 tsp lemon zest
- 6 tbsp fresh lemon juice
- 2 tbsp unsalted butter
- 1/4 tsp salt
- 6 tbsp all-purpose flour
- 1 cup sugar
- fresh berries and confectioners' sugar (optional)
Steps
- Heat the oven to 350 F and butter six 6-ounce ramekins.
- Melt the butter in a small pan and let it cool for 5 minutes.
- Separate the eggs, then whisk the yolks with milk, lemon zest, lemon juice, flour, sugar, salt, and melted butter.
- Beat the egg whites in a clean bowl until soft peaks form, then fold them into the lemon mixture.
- Divide the batter among the ramekins and place them in a 9-by-13-inch pan.
- Pour hot water into the pan halfway up the ramekins and bake for 35 to 40 minutes, until the tops are set.
