- 6 tbsp unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 2 large eggs
- 1 tsp lemon extract
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 2 tbsp lemon zest
- 2/3 cup + 2 tbs all purpose flour
- 3 tbsp light brown sugar
- 2 1/2 tbsp granulated sugar
- 4 tbsp unsalted butter
- 1 cup powdered sugar
- 2 1/2 tbsp lemon juice
Steps
- Heat the oven to 350 F and grease a 12-cup muffin pan with oil.
- Stir the topping flour, brown sugar, granulated sugar, and butter until crumbly.
- Whisk the muffin flour, baking soda, and salt in a medium bowl.
- Beat the butter, sugars, eggs, yogurt, lemon extract, vanilla, lemon juice, and zest in a large bowl.
- Fold the dry mixture into the wet mixture until just combined.
- Divide the batter among the cups, top with crumbs, and bake for 22 to 25 minutes.
- Cool the muffins for 10 minutes, then whisk the powdered sugar with lemon juice and drizzle it over them.
