Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1 1/2 tbsp granulated sugar
- 2 tbsp unsalted butter
- 1/4 teaspotspon salt
- 1 1/2 tsp finely grated lemon zest
- powdered sugar or granulated sugar
- extra lemon zest
- 2 tbsp granulated sugar
- 2 1/2 tbsp lemon juice
Steps
- Whisk the flour, eggs, milk, 1 1/2 tablespoons sugar, salt, and lemon zest in a medium bowl.
- Melt the butter, whisk it into the batter, and rest the batter for 20 minutes.
- Stir the lemon juice, 2 tablespoons sugar, and extra lemon zest in a small bowl.
- Heat an 8-inch skillet over medium heat and lightly coat it with oil.
- Pour in a thin layer of batter, cook for 1 to 2 minutes, flip, and cook for 30 seconds.
- Repeat with the remaining batter, spread each crepe with lemon sugar, and dust with powdered or granulated sugar.
