Ingredients

  • zest from 1 large lemon
  • 1/2 cup granulated sugar
  • 3/4 cup warm milk
  • 2 1/4 tsp quick rise or active yeast package yeast
  • 1 large egg
  • 1 egg yolk
  • 1/4 cup salted butter
  • 3 1/4 cups bread flour (optional)
  • 3/4 tsp kosher salt
  • 1 1/4 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 lemon
  • 1 tsp fresh lemon juice
  • optional but recommended: 1/4 teaspoon almond extract
  • 1 batch lemon cream cheese frosting

Steps

  1. Whisk the warm milk, yeast, egg, egg yolk, melted butter, lemon zest, and sugar in a large bowl.
  2. Add the flour and salt, then knead the dough for 8 minutes until smooth.
  3. Cover the bowl and let the dough rise in a warm place for 75 minutes.
  4. Mix the blueberries, sugar, cornstarch, lemon juice, and almond extract in a small bowl.
  5. Roll the dough into a rectangle, spread the blueberry mixture over it, and cut it into 9 rolls.
  6. Place the rolls in a greased 9-inch square pan, cover, and let them rise for 35 minutes.
  7. Bake at 350 F for 25 to 30 minutes, cool briefly, and spread with the lemon cream cheese frosting.
