Ingredients
- 1/2 cup granulated sugar
- 2 tbsp + 1 tsp cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp each: lemon zest & vanilla extract
- as needed kosher salt (optional)
- 2 cups old fashioned oats
- 1 cup light brown sugar
- 1 tsp each: baking powder & cinnamon
- 1/2 tsp vanilla extract
- 1 cup cold butter
- 2 1/2 tbsp cold water
Steps
- Heat the oven to 350 F and line a 9-by-13-inch baking pan with cooking oil.
- Stir blueberries, granulated sugar, 2 tablespoons cornstarch, lemon juice, lemon zest, and vanilla in a bowl.
- Mix oats, flour, brown sugar, baking powder, cinnamon, salt, vanilla, butter, and water until crumbly.
- Press two-thirds of the crumble into the pan and bake for 10 minutes.
- Spread the blueberry mixture over the crust and sprinkle the remaining crumble on top.
- Bake for 30 minutes, then cool in the pan for 15 minutes before cutting.
