Ingredients
- 2 tbsp olive oil
- 1 lb mushrooms
- 1 small onion
- 4 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 1 3/4 cups chicken broth
- 5 cups leftover turkey meat
- 1/2 tsp sea salt (optional)
- 1/8 tsp ground black pepper (optional)
- 1 tbsp parsley to garnish (optional)
Steps
- Heat the olive oil in a large skillet over medium-high heat and cook the mushrooms and onion for 7 minutes.
- Melt the butter in the skillet, stir in the flour, and cook for 2 minutes.
- Whisk in the chicken broth and simmer for 4 minutes, until the gravy thickens.
- Stir in the turkey, salt, and pepper, then simmer for 8 minutes until the turkey reaches 165 F.
- Sprinkle the parsley over the turkey and gravy before serving.
