Ingredients
- 2 lb russet potatoes
- 1 egg
- 1 tsp salt
- 2 1/2 cup unbleached all-purpose flour
- 1 tbsp butter
- 2 can (4 oz) sliced mushrooms
- 2 onions
- 1 cup beef broth
- 2 tbsp parsley
- bread crumbs (optional)
Steps
- Boil the potatoes in salted water for 20 to 25 minutes, drain them, and cool until easy to handle.
- Mash the potatoes, mix in the egg and salt, then knead in the flour until a soft dough forms.
- Roll the dough into ropes, cut it into dumplings, and rest the pieces for 10 minutes.
- Melt the butter in a large skillet, cook the onions for 10 minutes, then add the mushrooms and cook for 5 minutes.
- Pour in the beef broth and simmer the sauce for 15 minutes.
- Boil the dumplings in salted water in batches for 3 to 4 minutes after they float, then toss them with the sauce and parsley.
