Ingredients
- 1 lb 2 frozen king crab legs
- 24 oz riced cauliflower
- 1 tbsp sesame oil
- 2 large eggs
- 1 pinch salt
- cooking spray
- 1/2 small onion
- 2 cloves garlic
- 5 scallions
- 3 tbsp soy sauce or gf soy sauce
Steps
- Steam the frozen crab legs in a covered large pot with 1 inch of water for 8 to 10 minutes.
- Remove the crab meat from the shells and break it into bite-size pieces.
- Coat a large skillet with cooking spray and sesame oil, then cook the onion and garlic over medium heat for 3 minutes.
- Add the cauliflower rice and salt, then cook for 6 to 8 minutes until tender.
- Push the rice aside, add the eggs, and cook until firm before stirring them into the rice.
- Stir in the crab, scallions, and soy sauce, then cook for 2 to 3 minutes until steaming hot.
