Ingredients
- 1/2 red onion
- 6 button or baby bella mushrooms
- 1 pinch each salt and pepper
- 1 cans (15 oz) kidney beans
- 3/4 cup cooked quinoa
- 1 tbsp chili powder
- ~1/2 cup raw walnuts
- 1 shake vegan worcestershire or a-1 sauce
Steps
- Heat the oven to 400 F and line a large baking sheet with oil.
- Finely chop the onion and mushrooms, then cook them in an oiled skillet over medium heat for 6 to 8 minutes.
- Mash the drained kidney beans in a large bowl, then mix in the cooked vegetables, quinoa, chili powder, walnuts, sauce, salt, and pepper.
- Shape the mixture into 10 small patties and place them on the baking sheet.
- Bake for 25 to 30 minutes, turning once, until the patties are firm and browned.
