Ingredients
- 2 cups shortbread cookies
- 1/3 cup packed brown sugar
- 1/2 cup white chocolate
- 2 tsp grated lime zest
- 6 tbsp butter
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice
- 4 tsp grated lime zest
- 2 tsp vanilla extract
- 2 cups cold heavy whipping cream
Steps
- Line an 8-inch square pan with parchment and crush the shortbread cookies with the brown sugar.
- Melt the butter and white chocolate in a small pan over low heat, then stir in 2 teaspoons lime zest.
- Mix the melted butter mixture with the crumbs, press it into the pan, and chill for 5 minutes.
- Whisk the condensed milk, lime juice, remaining lime zest, and vanilla in a bowl.
- Whip the cold cream until firm peaks form, then fold it into the lime mixture.
- Spread the filling over the crust and freeze for 15 minutes, until firm enough to cut.
