Ingredients
- 1 cup cooked rice
- 1/2 cup ricotta or blended cottage cheese
- 1 handful chopped curly kale
- 8 oz sliced button or portabello mushrooms
- 1 clove garlic
- 1 tsp butter for sauteing
- grated cheddar and parmesan cheeses
- salt (optional)
Steps
- Heat the oven to 375 F.
- Sauté the mushrooms, kale, and garlic with butter in a medium skillet for 8 minutes.
- Stir the cooked rice and ricotta into the skillet mixture.
- Spread the mixture in a small baking dish and top it with cheddar and Parmesan.
- Bake for 15 minutes until hot and the cheese is melted.
