Ingredients
- 1/3 cup extra-virgin olive oil
- 4 oz pancetta
- 1/4 cup champagne vinegar
- 1/4 cup maple syrup
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 head radicchio
- 1 bunch kale
- 2 tart-yet-sweet apples
- 3/4 cup pecans
Steps
- Cook the pancetta in a 10-inch skillet over medium heat for 6 to 8 minutes until crisp, then cool it.
- Whisk the olive oil, champagne vinegar, maple syrup, salt, and pepper in a small bowl.
- Remove the kale stems, chop the leaves, and slice the radicchio and apples.
- Place the kale, radicchio, apples, pecans, and pancetta in a large bowl.
- Pour the vinaigrette over the salad and toss for 1 minute before serving.
