Ingredients
- 1/2 cup water
- 1/2 cup whole milk
- 8 tbsp unsalted butter
- 1 tsp granulated sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- oil for frying (optional)
- 1/4 cup confectioners sugar
Steps
- Bring the water, milk, butter, sugar, and salt to a boil in a medium saucepan.
- Remove the pan from the heat, stir in the flour, and cook the dough over medium heat for 2 minutes.
- Cool the dough for 5 minutes, then beat in the eggs one at a time until smooth.
- Heat 2 inches of oil to 350 F in a deep, heavy pot.
- Drop rounded tablespoons of dough into the oil and fry for 3 to 4 minutes, turning until golden and cooked through.
- Drain the zeppole on paper towels and dust them with confectioners sugar.
