Ingredients
- 1 tbsp unsalted butter
- 1 lb parsnips
- 1 lb apples
- 1 onions
- 2 tsp curry powder
- 1 tsp cumin
- 1 tsp ground coriander seeds
- 4 cup chicken or vegetable stock
- 1/2 cup heavy cream
- salt and pepper (optional)
Steps
- Melt the butter in a large pot over medium heat.
- Add the onion, parsnips, and apples, then cook for 5 minutes.
- Stir in the curry powder, cumin, and coriander, and cook for 1 minute.
- Pour in the stock, bring it to a boil, then simmer uncovered for 20 minutes, until the vegetables are tender.
- Blend the soup until smooth, stir in the cream, and heat gently for 3 minutes.
- Season with salt and pepper.
