Ingredients

  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 1 shallot
  • 3 cloves medium garlic
  • 2 cups arborio rice
  • 3/4 cup cooking sake
  • 2 tsp japanese soy sauce
  • 2 1/2 tbsp yellow or white miso paste
  • 4 cups homemade unsalted fish stock
  • 1/2 lb tiger prawns or shrimp
  • 1/8 tsp baking soda
  • 1/2 tsp kosher salt
  • 5/7 oz parmesan cheese
  • 1 1/2 stalk green onions
  • 1/5 oz parmesan cheese

Steps

  1. Set a 6-quart Instant Pot to sauté, heat the oil and half the butter, and cook the shallot and garlic for 2 minutes.
  2. Stir in the rice and cook for 2 minutes, then add the sake and scrape the bottom until the liquid mostly evaporates.
  3. Whisk the soy sauce, miso, and fish stock together, pour them into the pot, and stir well.
  4. Seal the lid, cook on high pressure for 6 minutes, and let the pressure release naturally for 10 minutes before releasing the rest.
  5. Toss the shrimp with baking soda and salt, then set the pot to sauté and stir them into the risotto for 3 to 5 minutes, until opaque and 145 F.
  6. Stir in the remaining butter and parmesan, then top with green onions and the remaining parmesan.
