Ingredients

  • 3 3/4 lb boneless pork shoulder roast
  • 2 tbsp olive oil
  • 1/2 cup water
  • 1 can root beer
  • 2 cloves garlic
  • 1 cup barbecue sauce (optional)

Steps

  1. Cut the pork shoulder into four pieces and coat it with pork rub.
  2. Heat the oil in a six-quart pressure cooker on sauté mode, then brown the pork for 8 minutes.
  3. Add the water, root beer, and garlic, scraping any browned bits from the bottom.
  4. Lock the lid and cook on high pressure for 45 minutes.
  5. Let the pressure release naturally for 10 minutes, then remove the pork and shred it with forks.
  6. Cook pork until it reaches 145 F inside, then rest it 3 minutes.
  7. Stir in barbecue sauce if using, and mix the shredded pork with some cooking liquid.
