1 1/2 cups long-grain white rice
1/2 cup finely chopped onion
2 cloves garlic
1 1/2 cups low-sodium vegetable broth
3/4 cup tomato sauce
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp kosher salt

Steps

Set the pressure cooker to sauté, heat the olive oil, and cook the onion for 3 minutes.
Add the garlic and rice, and sauté for 2 minutes until the rice is lightly toasted.
Pour in the broth and tomato sauce, then stir in the cumin, chili powder, and salt.
