Ingredients

1/2 cup white sugar
2 tbsp cold water
1 cup 2% milk
1 cup heavy cream
1/4 cup sugar
2 tsp vanilla extract
1 pinch sea salt
3 extra large eggs

Steps

Cook the sugar and cold water in a 7-inch round pan over medium heat until amber, then swirl to coat the bottom.
Whisk the milk, cream, sugar, vanilla, salt, and eggs in a bowl until smooth.
Pour the custard into the caramel-coated pan and cover it tightly with foil.
Add 1 cup water to the Instant Pot, set in the trivet, and place the pan inside.
Cook on high pressure for 25 minutes, release pressure naturally for 10 minutes, and remove the pan.
Chill the flan for at least 2 hours, loosen the edges with a knife, and invert it onto a plate.
