Ingredients

2 1/2 cups short grain brown rice
1 lb beef chuck or beef stew meat
4 tbsp olive oil
4 tbsp unsalted butter
1 large onion
3 large carrots
3 cups 720 ml very warm water
1 tbsp salt
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground paprika
1/2 tsp ground coriander
1 whole head garlic

Steps

Cut the beef into 1-inch pieces, chop the onion and carrots, and separate the garlic cloves.
Set a 6-quart Instant Pot to sauté, heat the olive oil and butter, and brown the beef for 6 minutes.
Add the onion, carrots, salt, pepper, cumin, paprika, and coriander, then cook for 3 minutes.
Stir in the brown rice and warm water, place the garlic on top, and pressure-cook on high for 22 minutes.
Let the pressure release naturally for 10 minutes, then check that the beef reaches 160 F and stir before serving.
