Ingredients
- 2 cups full fat milk
- 75 g unsalted butter
- 1/2 cup plain flour
- 1/2 tsp cooking salt / kosher salt
- 2 pinches ground white pepper
- 3 egg yolks
- 4 egg whites
- 1/2 tsp cream of tartar
- 15 g unsalted butter
Steps
- Heat the oven to 375 F and butter a 1 1/2-quart soufflé dish.
- Melt 75 grams butter in a saucepan over medium heat.
- Whisk in the flour and cook for 2 minutes.
- Whisk in the milk, salt, and white pepper, then cook for 5 minutes until thick.
- Stir in the Gruyère and egg yolks, then cool the mixture for 5 minutes.
- Beat the egg whites with cream of tartar until stiff peaks form.
- Fold the whites into the cheese mixture, pour it into the dish, and bake for 25 minutes until puffed and set.
