Ingredients
- 8 wooden skewers
- 1 red onion
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 cup cherry tomatoes
- 8 oz button mushrooms
- 2 tbsp olive oil
- salt (optional)
- freshly ground black pepper (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- fresh lemon wedges (optional)
Steps
- Soak the wooden skewers in water for 20 minutes.
- Cut the onion, zucchini, bell peppers, mushrooms, and tomatoes into skewer-size pieces.
- Toss the vegetables with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
- Thread the vegetables onto the eight soaked skewers.
- Heat a grill to 400 F, then grill the skewers for 12 to 15 minutes, turning every few minutes.
