Ingredients
- 3 tbsp olive oil
- 2 large yellow onions
- 1/2 cup barbecue sauce
- 2 tbsp water
- around 1 teaspoon hot sauce (optional)
- 7 oz smoked gouda cheese
- 1/3 cup chopped cilantro
- 8 flour tortillas
Steps
- Heat the grill to medium-high, about 400 F, and oil a grill-safe pan.
- Grill the sliced onions in the pan for 8 minutes, stirring once.
- Stir in the barbecue sauce, water, and hot sauce, then cook for 3 minutes.
- Fill half of each tortilla with onions, Gouda, and cilantro, then fold the tortillas.
- Grill the quesadillas for 3 minutes per side until browned and the cheese melts.
