Ingredients
- 12 button or crimini mushrooms
- 1 fresh corn
- 1 yellow squash or yellow pepper
- 12 cherry tomatoes
- 1 zucchini
- 1 small red onion
- 1 green bell pepper
- 1/4 cup olive oil (optional)
- 1/2 tbsp salt (optional)
- 1/2 tbsp ground pepper (optional)
Steps
- Heat an outdoor grill to medium-high heat, about 400 F.
- Cut the squash, onion, and bell pepper into thick pieces, and leave the mushrooms and tomatoes whole.
- Brush the vegetables with oil and season them with salt and pepper.
- Grill the corn for 10 minutes, turning it often.
- Grill the remaining vegetables for 8 to 12 minutes, turning them until tender and lightly charred.
- Cut the corn from the cob and combine it with the grilled vegetables.
