Ingredients

1/3 cup olive oil
3 tbsp fresh lemon juice
1 clove garlic
salt and freshly ground black pepper
1 1/4 cups dry orzo
1 cup crumbled feta
1 english cucumber
1 pkg grape tomatoes
1/2 cup sliced kalamata olives
1/2 cup chopped red onion
3 tbsp chopped fresh basil
3 tbsp chopped fresh parsley

Steps

Cook the orzo in boiling water for 9 minutes, then drain and cool it under cold water.
Whisk the olive oil, lemon juice, garlic, salt, and pepper in a large bowl.
Add the cooled orzo, cucumber, tomatoes, olives, red onion, basil, and parsley.
Toss the salad with the dressing for 2 minutes.
Fold in the feta and chill the salad for 5 minutes.
