Ingredients

1 1/2 tbsp extra virgin oil
1 clove garlic
1/2 onion
1 1/2 cups long grain white rice
1 1/4 cups chicken broth
1 cup water
1 large lemon
3 tbsp finely chopped parsley
3 tbsp finely chopped dill
salt and pepper

Steps

Heat the oil in a medium saucepan over medium heat and cook the onion and garlic for 3 minutes.
Stir in the rice and cook for 2 minutes.
Add the broth and water, bring to a boil, then cover and simmer for 18 minutes.
Remove the saucepan from the heat and let the rice rest, covered, for 5 minutes.
Fluff the rice with a fork and stir in lemon juice, parsley, dill, salt, and pepper.
