Ingredients
- 2 large ripe avocados
- 2 tbsp lemon juice
- 1 heaping tbsp chopped sun-dried tomatoes
- 3 tbsp diced ripe cherry tomato
- 1/4 cup diced red onion
- 1 tsp dried oregano
- 2 tbsp fresh chopped parsley
- 4 whole kalamata olives (optional)
- 1 pinch each sea salt and black pepper
Steps
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Mash the avocado with the lemon juice, salt, and pepper.
- Stir in the sun-dried tomatoes, cherry tomatoes, red onion, oregano, and parsley.
- Fold in the chopped Kalamata olives, if using.
- Taste and adjust the salt and pepper before serving.
