Ingredients
- 2 cups all-purpose flour
- 1 tbsp ground ginger
- 2 1/2 tsp ground cinnamon
- 1 3/4 tsp baking soda
- 1/4 tsp kosher salt
- 3/4 cup granulated sugar plus 1/3 cup for rolling
- 12 tbsp 1 1/2 sticks unsalted butter
- 1 large egg
- 1/4 cup plus 2 tablespoons blackstrap molasses
- 2 1/2 cups powdered sugar
- 6 tbsp unsalted butter
- 1 tbsp finely grated lemon zest
- 1 tbsp lemon extract
- 1 tbsp freshly squeezed lemon juice
Steps
- Heat the oven to 350 F and line two baking sheets with baking paper.
- Whisk flour, ginger, cinnamon, baking soda, and salt in a medium bowl.
- Beat 12 tablespoons butter with 3/4 cup sugar, then beat in the egg and molasses.
- Mix in the dry ingredients, shape the dough into 48 small balls, and roll each ball in the remaining sugar.
- Place the balls on the baking sheets and bake for 9 to 11 minutes until set around the edges.
- Cool the cookies on the sheets for 5 minutes, then move them to a rack to cool completely.
- Beat 6 tablespoons butter, powdered sugar, lemon zest, lemon extract, and lemon juice, then spread the filling between pairs of cookies.
