Ingredients
- 3 tbsp olive oil
- 5 cloves garlic
- 4 cups cherry tomatoes
- 1/2 cup water
- 1/2 tsp red pepper flakes
- 5/8 tsp sea salt
- 1 package (12 oz) pasta
- 1/2 bunch kale
- 1 can (15 oz) white beans
- 1/2 cup chopped kalamata olives
- 5/8 cup pasta water
- vegan parmesan cheese
Steps
- Boil salted water in a large pot and cook the pasta until just tender, reserving 5/8 cup pasta water before draining.
- Heat the olive oil in a large skillet over medium heat, then cook the garlic and shallot for 2 minutes.
- Add the cherry tomatoes, water, red pepper flakes, and salt, then cook for 8 minutes until the tomatoes soften and burst.
- Stir in the kale and cook for 3 minutes until wilted.
- Add the pasta, white beans, olives, and reserved pasta water, then toss for 2 minutes and top with vegan Parmesan.
