Ingredients
- 1 tbsp ground flaxseeds
- 1/2 cup unsweetened soy milk
- 1/4 cup unsalted roasted hazelnuts
- 3/4 cup medjool date
- 1/3 cup dutch-process cocoa powder
- 1/4 cup almond butter
- 1 tsp pure vanilla extract
- 1 tsp instant coffee granules
- 1/4 tsp salt
- 1/3 cup dairy-free dark chocolate chips
Steps
- Stir the flaxseeds and soy milk in a small bowl, then rest the mixture for 5 minutes.
- Heat the oven to 350 F and line an 8-inch square pan with oil.
- Blend the dates, hazelnuts, cocoa, almond butter, vanilla, coffee, salt, and flax mixture until smooth.
- Stir in the dark chocolate chips.
- Spread the batter in the pan and bake for 18 to 20 minutes.
- Cool the brownies in the pan for 10 minutes before cutting them into 15 pieces.
