Ingredients
- 8 tbsp salted butter
- 1/4 cup brown sugar
- 1 egg
- 1 tsp pure vanilla extract
- 1 tsp fresh orange zest
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 lb fresh figs
- 2 tbsp orange juice
- 1/2 cup sugar
- 1/8 tsp cinnamon
Steps
- Cook the chopped figs, orange juice, sugar, and cinnamon in a saucepan for 15 minutes, until thick.
- Cool the fig filling for 30 minutes.
- Beat the butter, brown sugar, egg, vanilla, and orange zest together, then mix in both flours, baking powder, and salt.
- Chill the dough for 70 minutes.
- Roll the dough into long rectangles, spread the fig filling down the centers, fold the dough over, and cut it into cookies over 35 minutes.
- Bake the cookies on a baking sheet at 350 F for 22 minutes.
- Cool the cookies for 15 minutes before serving.
