Ingredients
- 4 sweet potatoes
- 1 lb boneless skinless chicken breasts
- 1 tsp kosher salt
- 3/4 tsp garlic power
- 1 cup enchilada sauce

- 1/2 cup shredded cheddar cheese

Steps
- Place the sweet potatoes and chicken breasts in a slow cooker.
- Season the chicken with salt and garlic powder, then pour the enchilada sauce over everything.
- Cover and cook on low for 6 hours, until the chicken reaches 165 F and the potatoes are tender.
- Shred the chicken with two forks and split open the sweet potatoes.
- Fill the potatoes with chicken, then top with sour cream, cheddar, scallions, and cilantro.
