Ingredients
- 4 tbsp olive oil
- 1 large eggplant
- 1 lb ziti pasta
- 4 cloves garlic
- 1 onion
- 1 can (28 oz) tomatoes with juice
- 12 kalamata olives
- salt & freshly ground black pepper
- 1/4 cup chopped fresh basil
Steps
- Bring a large pot of salted water to a boil, cook the ziti until tender, and drain it.
- Heat 2 tablespoons olive oil in a large skillet over medium heat, add cubed eggplant, and cook for 8 minutes.
- Add the remaining oil, onion, and garlic, then cook for 5 minutes until softened.
- Stir in the tomatoes and olives, season with salt and pepper, and simmer for 12 minutes.
- Add the drained ziti and basil to the skillet, toss well, and cook for 3 minutes.
