Ingredients
- 2 tbsp ground flaxseeds
- 1/4 cup water
- 2 2/3 oz dairy-free dark chocolate
- 1/4 cup refined coconut oil
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1/4 cup unsweetened soy milk
- 1 tsp pure vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup dutch-process cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 2 2/3 oz dairy-free dark chocolate
Steps
- Heat the oven to 350 F and line an 8-inch square pan.
- Stir the flaxseeds and water together and let them stand for 5 minutes.
- Melt the first dark chocolate portion with the coconut oil, then whisk in both sugars, soy milk, vanilla, and the flax mixture.
- Stir in the flour, cocoa powder, baking powder, and salt until just combined.
- Fold in the second dark chocolate portion, spread the batter in the pan, and bake for 18 minutes until set.
- Cool the brownies in the pan for 4 minutes before cutting.
