2 garlic cloves
1/2 cup lightly packed fresh basil leaves
2 cups grape tomatoes
1 tbsp fresh lemon juice
1 tbsp balsamic vinegar

Steps

Heat the oven to 425 F and line a large baking sheet.
Slice the potatoes into thin rounds, toss them with oil and salt, and arrange them in one layer.
Roast the potatoes for 20 to 25 minutes, turning them once, until crisp and tender.
Chop the garlic, basil, and tomatoes, then toss them with lemon juice, balsamic vinegar, salt, and pepper.
