Ingredients
- 2 tbsp olive oil
- 1 1/4 lb scallops
- 2 tbsp unsalted butter
- 4 1/2 cloves garlic
- 1 pinch salt (optional)
- 1 pinch cracked pepper (optional)
- 1/4 cup dry white wine (optional)
- 1 cup heavy cream
- 1 tbsp lemon juice
- 1/4 cup fresh parsley
Steps
- Pat the scallops dry and season them with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the scallops for 2 minutes per side, then transfer them to a plate when they reach 145 F.
- Melt the butter and cook the garlic for 30 seconds in the skillet.
- Add the wine and cream, then simmer for 2 minutes.
- Stir in the lemon juice and parsley, return the scallops, and warm them for 1 minute.
