Ingredients
- 1 tbsp unsalted butter
- 2 lb frozen corn
- 5 clove garlic minced
- 1 cup light thickened cream
- 1 cup light cream cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar (optional)
- 1/4 tsp ground nutmeg
- 1/2 cup parmesan
- 1/2 cup chicken stock
Steps
- Melt the butter in a large skillet over medium heat.
- Cook the garlic for 1 minute, until fragrant.
- Add the corn and chicken stock, then simmer for 10 minutes.
- Stir in the cream, cream cheese, salt, pepper, sugar, and nutmeg.
- Cook for 8 minutes, stirring often, until thick and creamy.
- Stir in the Parmesan for 1 minute, until melted.
