Ingredients
- 6 ears corn
- 8 slices bacon
- 1/4 cup butter
- 2 stalks celery
- 1 red bell pepper
- 1 jalapeño pepper
- 1 vidalia onion
- 1 cup heavy cream
- 2 tsp cajun seasoning
- 1/2 tsp smoked paprika
- salt and pepper (optional)
Steps
- Cut the corn from the ears, dice the celery, bell pepper, jalapeño, and onion, and set them aside.
- Cook the bacon in a 12-inch skillet over medium heat for 7 minutes, then crumble it.
- Melt the butter in the skillet, add the celery, peppers, and onion, and cook for 8 minutes.
- Stir in the corn, Cajun seasoning, smoked paprika, salt, and pepper, then cook for 10 minutes.
- Pour in the cream and simmer for 7 minutes, stirring until the vegetables are tender and the sauce thickens.
- Fold in the bacon and cook for 1 minute before serving.
