Ingredients
- 1 cauliflower
- 6 cups vegetable broth
- 1 cup white onion
- 3 tbsp butter
- 4 tbsp flour
- 1 cup whole milk
- 1 1/2 cups cheddar cheese
Steps
- Place the cauliflower, broth, and onion in a 6-quart slow cooker.
- Cover and cook on low for 6 hours, until the cauliflower is very tender.
- Melt the butter in a saucepan over medium heat, whisk in the flour, and cook for 1 minute.
- Whisk in the milk and cook for 4 to 5 minutes, until thickened.
- Blend the slow-cooked cauliflower mixture with an immersion blender until smooth.
- Stir in the milk sauce and cheddar, then cook on low for 5 minutes until the cheese melts.
