Ingredients
- 3 oz fresh baby spinach
- 4 tbsp lemon juice
- 1 clove garlic
- 3 avocados
- 12 oz rotini pasta
- 1 cup frozen sweet peas
- 1 cup frozen corn
- 2 cups baby tomatoes
- 1 tsp sea salt (optional)
- 1/4 tsp black pepper (optional)
Steps
- Boil a large pot of water over high heat.
- Cook the rotini for 8 minutes, adding the peas and corn during the final 2 minutes.
- Drain the pasta mixture and cool it under cold water for 2 minutes.
- Mash the avocados with the lemon juice, garlic, salt, and pepper in a large bowl.
- Stir in the spinach and tomatoes.
- Fold the cooled pasta mixture into the avocado dressing within 20 minutes.
