- 1 2/3 cups very ripe bananas
- 1 cup almond flour
- 1/3 cup coconut flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tbsp butter
- 1/3 cup unpacked brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 4 oz reduced fat cream cheese
Steps
- Heat the oven to 350 F and grease a 12-cup muffin pan with cooking oil.
- Melt the butter, then stir it with the bananas, brown sugar, eggs, and vanilla.
- Whisk the almond flour, coconut flour, baking powder, baking soda, and salt into the banana mixture.
- Spoon half the batter into the muffin cups, add the cream cheese, and cover with the remaining batter.
