2 cups dried fruit
3/4 cup chopped pistachios
1/4 cup mint
1/3 cup extra virgin olive oil
2 tbsp minced shallots

Steps

Boil 4 cups water in a large pot, add the couscous, and simmer for 10 minutes until tender.
