Ingredients
- 1 1/4 cup sweetened coconut flakes
- 1/2 cup pecans roughly chopped
- 1 cans (15 oz) pear halves in juice
- 2 tbsp vegetable oil
- 1/3 cup brown sugar
- 2 tsp vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 3/4 cup wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
Steps
- Heat the oven to 375 F and line a 12-cup muffin pan.
- Drain and mash the pear halves in a large bowl.
- Whisk in the oil, brown sugar, vanilla, and egg, then stir in the flour, wheat flour, baking powder, salt, and cinnamon.
- Fold in the coconut and pecans until just combined.
- Divide the batter among the muffin cups and bake for 20 to 22 minutes, until the centers are firm.
- Cool the muffins in the pan for 5 minutes before removing them.
