- 2 large eggs
- 1 cans (13 1/2 oz) full-fat coconut milk
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp kosher salt
- 1 quart strawberries
- 2 tsp lemon juice
- 1 1/2 tbsp avocado oil
- 1 cup toasted sweetened coconut flakes (optional)
- 1/2 tsp lemon zest
Steps
- Whisk eggs, coconut milk, flour, sugar, salt, and avocado oil in a large bowl until smooth.
- Rest the batter for 5 minutes while preparing the strawberries.
- Toss sliced strawberries with lemon juice and lemon zest in a medium bowl.
- Heat an 8-inch skillet over medium heat and lightly oil it.
- Pour in about three tablespoons of batter, swirling to coat the pan, and cook for 1 to 2 minutes per side.
- Fill each crepe with the lemony strawberries and sprinkle with toasted coconut flakes.
