Ingredients
- 2 cups unbleached all-purpose flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 3/4 cup almond milk
- 6 tbsp unsalted butter
- 1 cup fresh or frozen blueberries
- 1 tsp lemon zest
- 1 tsp orange zest
- 1 tbsp turbinado sugar
- 1 tbsp sugar [white or brown]
- 1 tbsp melted butter
Steps
- Heat the oven to 375 F and line a 12-cup muffin pan.
- Whisk the flour, sugar, baking powder, and salt in a bowl.
- Whisk the eggs, almond milk, melted butter, lemon zest, and orange zest in another bowl.
- Stir the wet mixture into the dry mixture, then fold in the blueberries without overmixing.
- Divide the batter among the muffin cups, brush the tops with melted butter, and sprinkle them with turbinado sugar and the remaining sugar.
- Bake for 20 to 24 minutes until a toothpick comes out clean, then cool for 5 minutes.
