Ingredients
- 1 1/3 cups brown sugar
- 1/3 cup oil
- 1 egg
- 1 cup buttermilk
- 1 tsp baking soda
- 1 tsp vanilla
- 1/4 tsp salt
- 2 1/2 cups all purpose flour
- 1 1/2 cups grated zucchini
- 1 tbsp orange zest
- 1 cup sugar
- 1 1/2 tsp cinnamon
- 2 tbsp butter
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with butter.
- Whisk the brown sugar, oil, egg, buttermilk, baking soda, vanilla, and salt in a large bowl.
- Stir in the flour, zucchini, and orange zest until just combined.
- Spread the batter in the prepared pan.
- Mix the sugar and cinnamon, then sprinkle it over the batter and dot it with butter.
- Bake for 35 to 40 minutes, until the center is set and the cake reaches at least 160 F.
