- 3 eggs
- 1/2 cup pumpkin puree
- 1/3 cup olive oil
- 1 tbsp brown sugar
- 1 1/2 cups almond milk
- 5 oz plain nonfat greek yogurt
- 2 cups whole wheat flour
- 2 tbsp baking powder
- 1/2 tsp salt
- 1 heaping teaspoon cinnamon
- 1 pinch nutmeg
Steps
- Whisk the eggs, pumpkin, olive oil, brown sugar, almond milk, and yogurt in a large bowl.
- Stir the flour, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Fold the dry mixture into the wet mixture and rest the batter for 5 minutes.
- Heat a lightly oiled griddle or skillet to 350°F.
- Cook the pancakes in batches for about 1 minute per side, until firm and cooked through.
