4 slices sturdy white bread—i used 4 slices of barbara's homemade artisan bread in 5 minutes
2 tbsp butter
6 oz gran queso cheese
1/2 cup cooked chorizo sausage
2 pinches of smoked paprika
6 pickled peppadew peppers

Steps

Chop the Peppadew peppers and mix them with the cooked chorizo and smoked paprika.
Layer the cheese and chorizo mixture between the bread slices to make two sandwiches.
Melt the butter in a 10-inch skillet over medium-low heat.
Grill the sandwiches for 4 minutes per side, pressing gently, until the bread is golden and the cheese melts.
Cook sausage until it reaches 160 F inside.
Rest the sandwiches for 2 minutes, then cut each one in half.
